I like my eggs over easy. I love the fixings of a veggie omelet. Omelets often come out too runny or too dry.
Why not make over easy eggs with omelet fixings?
Onions go in some butter. Add peppers a bit later and toss in some parsley just before adding the eggs.
I moved everything to the side for easier flipping.
Add the eggs and let them sit for a bit. Separate them for flipping. Add a few olives (yumm!)
