Was driving my friend, Wendy, to the airport and we passed an In-N-Out. I was hungry and said to myself; “I could stop but on the way back and pick up some fries.”
Then I thought, nope! The family who owns it is racist af, they have almost nothing for vegetarians… and their fries are not good. Being that I am in a cooking year and I make “The Best!” french fries on earth, all I needed to do was wait the hour or so to make it home to my kitchen.
3 ingredients. That it.
Potatoes (sliced thin and as even as you can)
Oil (for frying)
Salt
Heat the oil and put a single potato slice in. When bubbles are raging around it, add more slices. Fill the oil with a single layer being careful not to overlap the pieces. You can turn the slices over if you want them super crispy but I like mine a little soft in the middle. Getting them to the perfect crunchiness just takes a few potatoes to get right.
I turn the heat down to medium after the first or second potato. You def do not want the oil too hot. If it is smoking it is too hot.
Take them out with tongs or a spatula. Place them flat on a plate that has a paper towel over it to soak up the extra oil.
Salt to taste.
Super easy. No fry on the planet taste better.
